This special issue is devoted to the theme of management of change in hospitality and tourism. Two articles investigate the approaches of food and beverage operators, three papers examine issues of change in students' educational experience, and the last two articles take a look at the topic from a macro level.

Of special interest in this number is the case study of the Prefecture of Chalkidiki, Greece, on the use of a Geographic Information System (GIS) in sustainable tourism decision-making, demonstrating the necessity and the value of this new technology.
